Crème Anglaise Sauce

This beautiful cream made its first appearance in the royal court in England in the sixteenth century, which is where it gets its name, crème anglaise (English cream). It has since been modified and adapted in many different countries. It tastes and resembles the texture of melted vanilla ice cream. It is used as a sauce to serve with desserts like souffles, lava cakes, berry salads and french classic known as the floating island.

Step 1

In a 3- or 4-qt (2.7- or 3.6-l) saucepan, add the milk, cream, vanilla paste or seeds, and half the sugar. Bring to a boil over high heat and stir occasionally to make sure the sugar is properly dissolved.
