Notes

If you need to “heat treat” your flour you can simply place it in a microwave-safe bowl and heat it in increments of 30 seconds. Mix in between each time, and check with a thermometer until you reach a temperature of 165oF (74oC). Allow the flour to cool completely before making your cookie dough or the dough will be extremely sticky and melt the chocolate. | Once frozen, place the balls in a large zip-top bag and store in the freezer for up to 3 weeks, if they last that long.
