Notes

Aged Egg whites: Whole eggs cracked and separated in advance and placed in jar in the refrigerator for several days. This allows the egg whites to liquify and separate in the jar. When ready to use simply weigh out the amount of egg whites you need and allow them to come to room temperature. This process allows for a more steady meringue, and it also allows the egg whites to whip up faster.
