Rough Puff Pastry

Making classic puff pastry is a long and difficult process to master but this recipe is a quicker way to get those beautiful layers without dealing with the beurrage and detrempe separately . In this recipe part of the butter is cubed and cold and added right to the dough and another amount of butter is softened and mixed into the dough as well. Once you form the dough its all about rolling it out to create those flaky layers.

Step 1

In the mixing bowl of the stand mixer fitted with paddle attachment, add the 240 g (2 cups) flour, room-temperature butter, sugar, and salt. Mix together. DO NOT ADD THE COLD CUBED BUTTER UNTIL THE END.
